I work as an Integrative Health and Wellness coach and Artesanal Chef. Giving talks, webinars, training people on healthy eating by combining ingredients based on their nutritional value and flavor.

Moreover, I provide personalized cooking classes for individuals and or groups.

Me: How do you get so involved with Allergies and Digestive disorders?

Maxiell: I had skin sensitivity issues, redness, pimples all over my body, you name it. During my teenage years, this caused traumas that damage my self-esteem as a woman. For more than ten years, I was under medication, creams, treatments, and nothing changed.

While I was taking the Integral Health and Wellness certification, I started digging deeper into healthy eating, nutritional supplements, allergens, and their impact in our digestive -intestinal system.

I decided to take more tests and dig deeper into my condition, get information, after several tests, the doctors diagnosed me a genetic disorder ” atopic dermatitis.”

So I understood that my immune system was weak, and every time I got exposed to Gluten, Dairy products, my order was affected.

I changed my eating habits, and immediately, I had a wellness experience, my skin, and my health improved.

I eliminate wheat, soy, seafood, peanuts, and dairy from my diet.

It is then when I found my purpose ” to play an essential role in people’s health.”

A few more questions.

Me: Based on your life experience, when someone comes to you with all these types of issues, what is your first step?
Maxiell: I recommend information, search for indicators, a test that can provide real data. I remember dealing with a woman who had a constant cough, and she is a public figure who talks for a living.
Imagine being in a conference room and not being able to do talk, to express yourself due to lack of air.
The first step was laboratory tests and observation of her habits. We found out that she was allergic to nuts or dry fruits, gluten, dairy, yeast, corn, soy, food coloring, preservatives, or additives.
Her choices were limited, and that caused depression and anxiety.
I had to spend a lot of time creating new recipes, finding and sharing information with her, educational materials, creating new habits. In the end, I was able to develop alternatives, more choices for her wellness experience.

The phrase “Conscious eating” what does that mean to you?

Maxiell: Is understanding what I am eating, why I am eating, and the consequences that my choice will bring.

It is our choice to give energy and wellness to our body or to deplete our collection of the nutrients and right fuel that needs.

There is also “Soul Food.” That is the food that feeds your soul, that nourishes your thoughts and feelings, and I am referring to the primary foods: Spirituality, Relations, Physical Activity, and your career or trade. If one of these is not in balance, it is tough to make a “Conscious eating” decision.

Me: Yes, it is essential to practice “Conscious eating”; but there are times where you need that blanket, the sensation that you are in your mommy’s arm, you know that “Confort Food”. For me is a “pastelon de platanos maduros” or ” mash potatoes” to name a few. What is that food for you?

Maxiell: I have a few as well, Empanadas, Yaniqueques, Hamburgers, Pizza, and others.
